For the base
  1. Begin by pre-heating the oven to 180C / 160C fan assisted.
  2. Scrub, chop and boil the potatoes.
  3. Mash with the quark, mustard powder, salt & pepper, herbs
  4. Spread in 20 cm silicone non-stick pan and place in oven for 10mins.
For the filling
  1. Whisk together the eggs and quark in a large bowl and set aside.
  2. Chop the spinach and slice the peppers and spread over the potatoes.
  3. Pour the whisked egg and quark mixture over the vegetables.
  4. Crumble the feta on top, pressing some of it down into the mixture.
  5. Bake for 30-40 minutes until firm. If the top starts to brown before fully cooked, cover with foil to prevent over browning.
